Canadian Albacore Tuna
Albacore Tuna caught in Canada is famous for high oil content.
This is because of the cold ocean, and Albacore Tuna feeds on high oil content fish such as herring and pilchard.
The Canadian Albacore Tuna tends to be smaller size than the southern Albacore Tuna.

Grading Standard
We have our grading standard, which includes boat, catching area, certain criteria for handling the fish.

Catching
Tuna is caught only at the BC coast. The catching method is called Troll.

Throat Cut/Bleeding
Bleeding starts by cutting the throat.

Washing
After fish has been completely bled, fish has been washed by the ocean water.
Now ready to go to the Blast freezer!
